For this recipe, stuffed with minced meat in a frying pan, you can use not only young zucchini, but also old ones, because the middle will still be removed. Regarding minced meat for stuffed zucchini. You can use any minced meat. My favorite was cooking with minced pork. By the way, you can add a small amount of mushrooms to the minced meat filling. These can be oyster mushrooms, champignons or wild mushrooms.

Ingredients

  • Water or mineral water - 70 ml.,
  • Wheat flour - 100 gr.,
  • Vegetable oil (refined).

So, having prepared all the ingredients, you can start preparing zucchini stuffed with minced meat. Peel the onion. You will need it to prepare the meat filling. Cut it into small cubes.

Wash the zucchini. Use a knife to cut off the ends. After this, cut the zucchini into circles.

The thickness of the circles should be 2 cm. If you cut them thicker, they may not cook properly. That's why I recommend this size. Now you need to prepare them for stuffing. In other words, turn the circles into rings into which the minced meat will be placed.

It is very difficult to cut out even circles with a knife, but the most convenient way to do this is with a cap from a plastic bottle (no matter what size). Place the zucchini round on a cutting board. Place the lid in the center. Press down with your hand. Voila, the circle is ready. Thus, prepare all the remaining zucchini for stuffing.

Place minced pork in a bowl.

Add chopped onion to it. Season the meat filling with salt and pepper to your taste.

Mix the minced meat thoroughly with your hands.

Zucchini and minced meat are ready. All that remains is to prepare the egg batter. In my recipes, I have already written more than once about how you can make it quickly and tasty. Beat the eggs into a bowl. Beat them with a fork until smooth.

Season with salt and pepper.

Add mineral water or plain water if the former is not available.

Stir. Add flour and mix the batter again.

The batter was as thick as pancake batter.

Let's move on to the next stage - stuffing the zucchini. We fill the holes in the zucchini with minced meat.

Heat the frying pan with oil well. Dip zucchini stuffed with minced meat into batter. Place in the pan. After 2-3 minutes (depending on the heat you have), turn them over.

A simple dish for every day - stewed zucchini with minced meat - is easy and quick to prepare. The zucchini makes the dish juicy, while the tomatoes add sourness to the dish.

I often serve this dish with pasta or mashed potatoes. But you can serve stewed zucchini with minced meat as an independent dish. It is especially good to prepare this dish during the zucchini season, when the zucchini is still young and without seeds.

We will prepare all the products according to the list. You can also add your favorite spices to the dish if desired. It is better to use minced pork or beef. Garlic is also welcome in this dish.

Peel the onion and cut into cubes. Grate the carrots on a medium grater.

Pour 1 tbsp into the pan. olive or any vegetable oil and fry the onions and carrots until soft, 5-7 minutes.

Place the minced meat in the pan with the vegetables. Add salt and pepper to taste.

Fry the minced meat with vegetables, breaking up any lumps of minced meat with a fork for about 5 minutes, until the minced meat turns gray, as in the photo.

Wash the zucchini. If your zucchini is not young, peel it and remove the seeds. We cut the young zucchini into circles, and then cut the circles into quarters.

Place the zucchini in the frying pan with the minced meat and vegetables. Simmer everything together, stirring, for 5-7 minutes.

Now add diced fresh tomatoes. You can, like me, use store-bought tomatoes in their own juice. At this point you can add your favorite spices and garlic if desired.

Mix all ingredients well. Cover the pan with a lid, reduce the heat to medium and simmer the zucchini and minced meat for another 10 minutes.

Serve the cooked stewed zucchini with minced meat hot.

How to fry zucchini with ground meat in a frying pan

By the way, instead of minced meat, you can use finely chopped meat. It will take a little longer to prepare, but the result will be more impressive.

  1. Peel the onion and finely chop. If the onion turns out to be very caustic, periodically wet the knife in cold water.
  2. Heat the frying pan over low heat and add a little vegetable oil. We remember that the fattier the minced meat we choose, the less oil we will need.
  3. Add the onion and fry until translucent, stirring occasionally. It will take 3 minutes.
  4. Peel and chop the garlic, and then add to the onion. Stir again and fry for another 2 minutes until a characteristic garlic smell appears.
  5. Place minced meat in a frying pan. At first it will become crusty, so you need to constantly break it with a spatula and stir. Fry the minced meat until it becomes homogeneous and loses its red meat color.
  6. Salt and pepper to taste.
  7. While the minced meat is fried, prepare the zucchini. To do this, we wash them and get rid of excess moisture. Cut them into thick rings and then into large cubes. Don't make the pieces too small, otherwise they risk turning into a puree.
  8. Add the zucchini to the minced meat, now the whole secret of how to fry is not to dry it out. When frying the minced meat, juice has already released, but if it is not enough, you can add a little water. Stir and leave to fry for another 10 minutes. During the process you will need to stir 1 or 2 more times.
  9. Finely chop the greens and choose the one that goes best with the meat. For lamb it can be cilantro or tarragon, for chicken it can be parsley, and green onions will fit perfectly into a dish with pork. A minute before turning off, add the greens to the minced meat and mix again.

The zucchini with minced meat is ready and can be served.

Zucchini stuffed with minced meat in a frying pan, the recipe with photos of preparation of which is offered to your attention today, was recommended to me by an old friend of mine a couple of years ago. We met quite by chance in a minibus, when she was driving from her dacha with bags full of freshly picked vegetables. Of course, we talked about this and that, and when I asked what she was going to cook from her harvest, then she shared this recipe with me. I’ll say right away that I had doubts that the dish should be prepared exactly this way, and not the way I usually do it. But, I decided to trust the experienced housewife and did everything exactly as she said.
You can’t imagine how wonderful the zucchini turned out! I have never cooked or eaten anything like this before, my family were simply delighted. The fact is that, according to the classics, zucchini circles stuffed with minced meat must first be fried until crusty and then simmered in. And here is a completely different approach - circles filled with minced meat, breaded in egg and breadcrumbs and fried until cooked on both sides. My son called this dish cutlets in zucchini, and, in fact, he is absolutely right. It is only important to choose young squash fruits so that they are soft and tender, and cut them into circles no more than 1 cm thick.
By the way, I make minced meat for this dish in the same way as for cutlets, with the addition of onions and a bun soaked in milk. That's why my son named this dish that way.

Ingredients:
- zucchini fruit – 1 pc.,
- minced meat (pork or assorted) – 300 g,
- chicken table egg – 2 pcs.,
- onion – 1 pc.,
- white bread – 1 slice,
- salt and spices to taste,
- breadcrumbs – 1 tbsp.,
- vegetable oil – 3 tbsp.

How to cook with photos step by step





First, let's prepare the minced meat; even if we take store-bought, we need to grind it again in a meat grinder, adding finely chopped onion and a slice of white bread soaked in milk or water. Next, add salt and spices at your discretion and let the minced meat rest a little.




Next, we wash the zucchini and, without cutting off the peel (we take young fruits), cut it into thin circles, the thickness of which should be no more than 1 cm. Then carefully cut out the middle using a knife or spoon.




Now we make small balls from the minced meat and insert them into the hole of the zucchini. We press down a little with our hands, giving the product shape.






Then beat the eggs and add salt to them.
Dip the stuffed circles into the egg mixture and then sprinkle with breadcrumbs.




Place our zucchini in a frying pan heated with oil.




And fry on both sides over low heat so that both the meat and vegetables are cooked through.






Then we take the products out onto a paper napkin to remove any excess fat and immediately serve them hot.
