Compound:

  • 3 medium sized soft pears
  • 150 g cranberries (fresh or frozen)
  • 200 g wheat flour
  • 200 g chilled butter
  • 150 g sugar
  • 1/4 teaspoon salt

How to make pear crumble - recipe:

  1. First, let's prepare all the ingredients. I recommend not taking pear varieties that are too watery, as they will release too much juice. My pears are quite small, so I took 4 of them.

  2. Now let's start preparing the dough. To do this, grate 175 g of butter on a coarse grater (it is best to pre-cool the butter in the freezer).

  3. Add sifted wheat flour, salt and 100 g of sugar to the butter.

  4. Now we will rub the dough with our hands until it is formed into a homogeneous, plastic lump that does not stick to our hands.

  6. Wash the pears, core them and cut them into thin slices - about 4-5 mm thick.

  7. We sort out the cranberries, wash them and dry them with a paper towel.
  8. Now melt the remaining 25 g of butter in a frying pan and pour in 50 g of sugar, stir the sugar periodically with a spatula and wait until it turns into caramel. This takes from 5 to 10 minutes. As soon as the sugar has melted into a brownish thick mass and began to emit a characteristic caramel aroma, pour the chopped pears and cranberries into the pan.

    We do this quickly and carefully, because the caramel is hot and moisture may remain on the fruit. The pears will release juice and our task is to evaporate it, this takes about 10 minutes.

  9. Next, we transfer the contents of the frying pan into the form in which our crumble will be baked, and evenly distribute the fruit along the bottom.

    If you have a frying pan with a removable handle that can be used for the oven, then you can not use an additional baking dish, but cook the crumble from start to finish in it.

  10. Grate the chilled dough over the filling using a coarse grater. If it doesn’t turn out very evenly, then at the end, use a fork to carefully distribute it throughout the entire pan.

  11. Place the pear crumble in an oven preheated to 180 degrees for 30 minutes.

  2. Place in a frying pan and sprinkle with sugar. Simmer for 10 minutes. Add rum and cinnamon, simmer for another 5 minutes.
  3. Soften the butter, combine with flour, soda, sugar and lemon zest. Grind until more or less homogeneous crumbs are obtained.
  4. Grease a baking dish with melted butter. Lay the apples out in an even layer. Sprinkle them with crumbs.
  5. Bake in the oven, temperature – 190 °C, time – 25 minutes.
