  4. To prevent the growing dough from sticking to the dry and clean towel with which the bowl is covered, you can sprinkle the dough with flour or grease it with oil. You can also use cling film instead of a towel;
  5. Before adding flour, we highly recommend passing it through a sieve. This saturates it with oxygen and subsequently the baked goods rise higher and become more fluffy;
  6. It is always more convenient to pour liquid into flour, and not vice versa;
  7. When kneading the dough, you can rub your hands with vegetable oil and then the dough will not stick to your hands;
  8. If you add too much sugar to the dough, it will start to burn and the baked goods will darken very quickly;
  9. Before filling the bowl with ingredients, you need to make sure that it is clean and does not smell anything. Otherwise, the pies will have the added bonus of leftovers from other food or liquid;

  5. Stir until the dough becomes smooth and does not stick to your hands - no more than ten minutes;
  6. Now you need to give the dough about fifteen minutes to rest and then you can form it into pies with the desired filling.

Ingredients: 570 g high-grade flour and a similar amount of refined oil, 1 tbsp. filtered warm water and 1 tbsp. boiling, 3 chicken egg yolks, a tablespoon of granulated sugar, a teaspoon of table salt, 55 g of fresh yeast.

  1. Three tablespoons of flour should be combined with table salt and granulated sugar. Not cold oil is poured in there and immediately hot boiling water. The mass is thoroughly rubbed with a spoon until smooth. It must cool slightly before further use.
  2. Finely crushed yeast is poured into the warm mixture. Mixed yolks and warm water are immediately added there. By the way, you can use slightly warmed milk instead.
  3. The resulting composite mixture is poured into flour sifted a couple of times.
  4. An elastic, non-sticky dough is kneaded. Hands are lightly lubricated with sunflower oil during the process. Kneading may require about half a glass more flour.

You can immediately start shaping the pies. If the filling is made from pieces of fruit, then regular potato starch will help thicken it.

Appetizing, rosy, fluffy pies are both praise for the hostess and a symbol of prosperity in the house. It is no coincidence that a recipe for oven-baked pies with a wide variety of fillings is found in almost every national cuisine in the world.

For baked goods to be truly delicious, you need... The simplest recipe is yeast-free.

Will need

  • kefir - 0.5 l;
  • flour - 300 g;
  • egg - 1 pc.,
  • soda - 5 g;
  • salt - ¼ tsp;
  • sugar - 5 g.

Put soda in kefir. It is important that it extinguishes properly: this will be indicated by the whipped foam that appears. Then add egg, sugar, salt. Flour should be added gradually. Knead the dough thoroughly and place it in small portions on a cutting board sprinkled with flour, immediately forming flat cakes.

Place the minced meat in the center of the flatbread and bring its edges together. Place the pies on a greased baking sheet and bake them in the oven at a temperature of 220° - 240°C for 20 - 25 minutes.

For quick pies in the oven, you need to cut the dough immediately after mixing all the ingredients, without standing, so that it does not turn out to be too loose.

It is best, if possible, to use yogurt made from homemade milk instead of kefir: it makes the yeast-free milk especially airy.

It is better not to use oil so as not to make the dough heavier.

When preparing jam without using yeast, you need to add pieces of fresh fruit with dense pulp (apple is perfect), pinch in a herringbone pattern and place them on a baking sheet with the seam facing up. The filling will not leak or burn.

Baked pies in the oven using yeast

A classic cooking method, but quite labor-intensive and time-consuming.

Required Ingredients

  • yeast - 10 g;
  • egg - 1 pc.;
  • flour - 400 g;
  • butter - 10 g;
  • sugar -25 g;
  • salt - 5 g;
  • separately beaten yolk for greasing.

Warm the milk slightly. Dissolve the yeast in water, strain and add it to the milk, add salt, sugar, flour, add eggs and stir until smooth.

At the very end, add softened butter, mix again, cover the dough with a napkin and leave in a warm place for about 1.5 hours. When the dough has risen, you need to knead it, leave it for another 2 hours, then knead the finished dough again and place it on a table sprinkled with flour. Make a rope out of the dough, cut pieces from it, form them into balls, let them rest for 5 minutes and roll out the flatbreads.

Place the filling prepared in advance in the middle of each flatbread and shape into pies. Grease a baking tray, place the pies on it so that there is a distance of 3 - 4 cm between them and brush the top with egg yolk. Baked pies should be in the oven for 15 - 20 minutes at a temperature of 230° - 260°C.

Very tasty pies with fruit filling in milk filling

They are baked not on a baking sheet, but in a mold.

Will need

  • flour – 0.5 kg;
  • yeast – 20 g;
  • milk – 375 ml;
  • butter – 100 g;
  • egg – 1 pc.;
  • sugar – 70 g;
  • plum jam – 150 g;
  • powdered sugar – 2 tbsp. l.;
  • fat for greasing the mold.

Dissolve yeast in 250 ml of milk. Add half the norm of butter, 50 g of sugar, egg, flour, salt. Leave for half an hour. Mix the dough again, divide it into 16 parts and form into balls. Make holes in them, fill them with jam, and pinch them.

Preheat the oven to 50°C. Place slightly flattened balls close to each other in a greased pan, cover, and leave in a warm oven for 15 minutes. Remove the mold and preheat the oven to 200°C. Heat the remaining milk, sugar and butter, stirring, in a small bowl until the sugar is completely dissolved. Pour the mixture over the pies and bake for 30 minutes.

To prevent the products from acquiring a sour taste, the dough should not be allowed to rest.

Oil should be used strictly according to the recipe, as if there is too much oil, the pies will spread.

Sugar should also be measured as much as the recipe for dough for pies in the oven recommends. Excessive amounts of sugar slow down the fermentation process, the dough becomes heavy and does not bake well. If there is not enough sugar, the pies will not be golden brown.

Easy, quick, economical recipe

It will help to diversify the recipe for delicious pies in the oven using potatoes. This is an original option for baking or a snack in the middle of the day, for an outdoor picnic or tea party with guests.

Required Products

  • flour - 800 g;
  • dry yeast - 11 g (small pack);
  • potatoes - 4 – 5 pcs.;
  • butter - 100 g;
  • sugar - 30 g;
  • salt - 1/4 tsp;
  • For the filling, a good choice would be fried mushrooms, meat, offal, fish, egg with green onions.

Peel the potatoes, cook until tender, drain the water into a separate bowl. Crush the potatoes, put them in a liter container in such a way that there is room for the broth in which they were cooked: they need to fill the container with the potatoes to the top.

Then put the potato mixture into the bowl where the dough will be kneaded, add yeast, salt, sugar, butter, 100 g of flour. Mix everything carefully, cover with a towel, and leave for half an hour. Then mix in the remaining flour and put it in a warm place again for 30 minutes. All subsequent steps are the same as using regular yeast dough. Bake at 220°C for approximately 25 minutes.

If the dough contains insoluble additives, their volume should not exceed 100 g. for every 400 gr. liquid in the dough, otherwise it will not rise well.

Oil should not be more than 100 g. for 200 gr. liquid, otherwise the dough will be dry and thin.

The taste of the dough is very easy to vary by mixing different types of flour, or adding onion, tomato or pumpkin juice to milk.

They allow you to make this pastry appropriate on any table, as an appetizer and an independent dish, as an addition to soups and broths, milk, tea and compotes. And treating yourself and your loved ones with delicious pies is very healthy!
