  3. The basis for mulled wine is always red wine. You can add just a little cognac or rum to it - it all depends on the housewife’s preferences or the specifics of the recipe.
  4. Spices should always be boiled in water first.
  5. You need to cook mulled wine by stirring constantly, over low heat, so that the aroma of the spices dissolves in it as best as possible.
  6. The drink must be infused to make its taste more intense.
  7. Before serving, mulled wine must be strained.

German mulled wine

German mulled wine is not very intoxicating and rather gives more vivacity, but does not relax. This, as they say, is its national peculiarity.

To prepare German mulled wine you will need red wine, freshly squeezed orange juice and - a completely unexpected ingredient - strongly brewed and strained black tea. A glass of each of these drinks is enough for a serving for two or three people. They should be mixed in one container and put on low heat.

Spices: cloves - a couple of sticks, to taste anise and cardamom. They are added directly to the mixture heated over the fire.

The orange is cut into slices and added to the heating drink. If you want to make the mulled wine stronger, you can pour fifty grams of rum, liqueur, cognac or whiskey into the aromatic mixture.

You can sweeten mulled wine with a couple of spoons of granulated sugar.

As soon as white foam appears, but the drink has not yet boiled, you can remove it from the heat and pour it hot into glasses, making sure to strain it.

It will be very good outdoors, while relaxing in nature, on a winter evening around the Christmas fire.

Non-alcoholic mulled wine

Wine is not necessary in the list of ingredients for mulled wine. For those who cannot afford alcohol, you can prepare a non-alcoholic drink. The same tart, aromatic, warming as with wine. The difference between this drink is that you can drink it even in the morning before going to school or work. This drink can be drunk by everyone - both elderly people and children. It contains many useful vitamins and microelements, tones, and improves immunity. In addition, the taste is practically no different from mulled wine prepared with wine.

What ingredients are needed for non-alcoholic mulled wine? At home, it is usually prepared using fruit juices. You can use different options - cherry, grape, cranberry, any berry. Everything you like will be to your taste and your soul will be drawn to it. By the way, if you want to experiment, then non-alcoholic mulled wine is the most suitable drink for this. Therefore, it can even be prepared using a mixture of different juices.

You will also need lemon zest (about a tablespoon), one orange and a fragrant apple. They need to be cut into slices and boiled directly in mulled wine.

You cannot use only juice, because then the drink will be too cloying. Therefore, you will need water.

Preparing the aromatic spice mixture

Mulled wine is a flavorful drink and requires spices. By the way, in the store you can buy special ready-made sets of spices for mulled wine. However, it is better to prepare a mixture of aromatic herbs yourself.

  1. You will need two cinnamon sticks, you can also use ground cinnamon - about a teaspoon.
  2. Fresh or dry ginger, you only need to grate it a little to give the drink a slight pungency and spicy aroma.
  3. You can take a pinch of ground cardamom. However, it is better to use whole grains.
  4. Cloves - three pieces.
  5. Allspice - two pieces.

Non-alcoholic mulled wine preparation technology

First, mix all the spices in a separate bowl so that they can be immediately poured into the boiling mixture. Peel, cut or grate fresh ginger. You will need a very small piece of it so that the ginger taste and smell does not interrupt the aroma of other spices and ingredients.

Apples and oranges can be cut into small cubes or slices. By the way, oranges cut into semicircular slices look much nicer in mulled wine. The zest is removed from the lemon. To do this, use a fine grater to lightly rub off only the very top layer of the yellow peel from a whole lemon. One or two teaspoons of zest will be enough.

We follow the main rule

When you have collected all the ingredients for making mulled wine, you can start cooking it. The most important rule - never bring this drink to a boil - also applies to its non-alcoholic version. Cooking temperature is about 70 degrees.

A glass of water is poured into a prepared, clean, non-enamelled metal pan. It is good if it is spring or filtered water, which does not contain any foreign odors - bleach, iodine, iron.

Spices are poured into heated water. Now you need to wait a little for the spices to give up their rich contents to the future drink. You can always adjust the required amount of spices to taste, enhancing the aroma.

When to add fruit

After the delicious smell spreads throughout the kitchen, you can add juice to the pan, and then fruit with lemon zest.

Then you need to make sure that the mixture does not boil under any circumstances, but at the same time is hot enough. If suddenly this happens, you need to immediately remove the container from the heat, reduce it and put the mulled wine back to heat. It should be cooked for a quarter of an hour.

During this time, the fruits will have time to impart their taste and aroma to the drink, but at the same time they will not boil over.

Next, you can try the mulled wine to see if you need to add a little sweetness to it by adding literally one or two teaspoons of sugar. If the taste is quite satisfactory, then you can turn off the heat under the pan, cover it with a lid and let the mulled wine brew for another fifteen minutes.

How to Serve a Soft Drink

Pour mulled wine into a decanter or glasses through a strainer so that the lemon zest and spices do not interfere with drinking it. You can put a slice of orange and apple on top of the glass, and add a cinnamon stick for beauty.

Mulled wine has German roots and means hot wine. This drink is considered traditional and widespread in European countries. Most often consumed in winter and associated with the Christmas holidays. A recipe for a drink similar in composition and preparation principle is found in mentions of ancient Roman historians.Although the main purpose of the drink is to warm a person and it is most often sold at street Christmas markets and festivities, at home it gives a certain special comfort to quiet winter evenings., let’s take a closer look at several different options.

Classical homemade mulled wine recipe

The whole point of mulled wine is that it is based on red wine, it is heated to a temperature of at least 70-80 degrees and flavored with sugar and aromatic spices. Mulled wine can be not only warming, but even useful during colds.

The composition of mulled wine according to the classic recipe is as follows:

  • red wine - 1 bottle (0.75 ml);
  • water – 100 ml;
  • granulated sugar – 1 tbsp. l.;
  • nutmeg (grated) – 1 pinch;
  • ginger, ground – 1 tsp;
  • cloves – 5 stars;
  • cinnamon stick (0.5 tsp powder).

The recipe is designed to make 4 servings of the drink. You can add other spices and even fruits, but then it will no longer be classic mulled wine, but its analogues. They will be discussed later, but for now we are preparing a real European drink.

When choosing wine, you can safely give preference to red ones, and it doesn’t really matter whether it’s dry or semi-sweet. It is not necessary to choose expensive alcohol; mid-priced wines are in no way inferior to their more expensive counterparts in mulled wine. You should not buy fortified drinks, as hot alcohol gives off an unpleasant smell of alcohol, which will spoil the mulled wine.

Preparation time 20 minutes, calorie content of the drink 124 kcal.

  1. You need to take a large saucepan that will contain all the listed ingredients. Place the listed spices in it and add water.
  2. Turn on the heat, wait for the liquid to boil and remove from the stove. You need to infuse the water with spices for at least 10 minutes.
  3. The infusion must be strained to get rid of grains of seasonings. To do this, you can use a tea sieve or clean gauze.
  4. Then you need to pour the wine, strained infusion and sugar into the pan. Mix everything thoroughly.
  5. Place on low heat and heat to a temperature of no more than 80 degrees. It is important that the drink does not boil; as soon as the slightest signs of boiling appear, you must immediately remove the pan from the heat.
  6. Cover with a lid and let stand for a few minutes so that the drink infuses and cools slightly.

This completes the process of preparing the drink. Hot mulled wine is poured into tall glass mugs or ceramic dishes that retain heat longer.

The drink should be consumed immediately while it is warm. Reheating is not possible. In this case, mulled wine loses its characteristic aroma and taste. In European countries such as Germany, Switzerland and the Czech Republic, mulled wine is drunk on the street along with grilled food.

Suitable for those who do not drink alcoholnon-alcoholic mulled wine recipewhich differs only in that instead of red wine, grape juice is taken. Otherwise, everything happens exactly the same.

Red wine can be replaced with white if desired. In this case, it will no longer be a completely classic option, but situations are different. White wines are more acidic, so to make mulled wine you will have to take three tablespoons of sugar, instead of the one indicated in the recipe.

Some people add salt to the composition, but this is strictly for everyone. To get it rightmake mulled wine at home according to this recipe you need to prepare the orange. The fact is that the peel of store-bought fruits is treated with wax to preserve the fruit as long as possible. If it is not removed, it will dissolve in the hot drink and enter the body. You can't just erase or wash it away. You need to immerse the orange in hot water for 5 minutes, and only then prepare it for the drink.

Mulled wine “Winter”

Pour the tea into a container prepared for heating (do not use aluminum containers, it will spoil the taste of mulled wine). Add, bring to a boil and add spices. Field notes

Wine. Choose full-bodied, rich red dry or semi-sweet wines such as Cabernet, Claret, Bordeaux, Zinfandel, Chianti or, say, Kindzmarauli. You can use white wine, but this is not for everyone. Fortified examples, which overload the drink with heavy alcoholic tones, do not go well with mulled wine - it is better to add a little port or Madeira to the already prepared mulled wine to add a little strength and complexity to it. Don’t use wine that you wouldn’t drink just like that, but it doesn’t make sense to spend money on expensive ones either. We'll have to find a compromise. The Germans, for example, found it not in the search for an ideal price-quality ratio, but in the use of homemade fruit wines, in particular (follow the links for recipes for these wines). It’s not uncommon for the British to use cider or even some local ale as a base, but that’s already . Spices. The traditional ones that have always been in it include cloves, cinnamon and nutmeg. I also add a few black peppercorns and 1-2 stars of star anise. Feel free to add your favorite spices to the drink, for example: fresh ginger root, bay leaf, allspice, white and pink pepper, cardamom, vanilla, fennel, anise, etc. You can add some herbs, for example, a couple of sprigs of rosemary, mint or sage. But don’t overdo it - spicy soup is not about mulled wine. I always use spices whole, slightly crushed in a mortar, and I advise you to do the same. Fruits. The zest of oranges (or clementines) is classic here. You can add the zest of other citrus fruits, in particular lemon or lime. In my first mulled wines, I added whole fruits, in slices, but then the drink takes on a compote taste and becomes a little more sour than it should be. If this doesn’t bother you (after all, excess acidity can easily be balanced with sweetener), you can add slices of any available fruits and/or berries to your warming drink: apples, pears, cranberries, raspberries, blackberries, etc. Sweetener. White sugar, or even better powdered sugar for quick dissolution, will be the most neutral source of sweetness. Brown cane sugar will add a little warmth to the drink and make it more expressive, but this is not an acquired taste. Honey has always been a good alternative to sugar, but not every stomach can handle it when heated (I won’t mention the dangers of honey heated above 40 degrees; although I did mention it). Strong alcohol. Most traditional mulled wine recipes (in an international context) include fruit brandy or rum as an additional alcohol. Not less common are various fortified wines, such as port, Madeira and sherry. In England, the above-mentioned fortified ginger wine is often used, which should be prepared at home. The palette of strong alcohol in mulled wines can be expanded endlessly: vodka, aquavit, Calvados, whiskey, dry liqueurs like
