Recipes for main courses for the New Year 2017


For this dish you will need the following products: 1 kg of salmon fillet, 300 ml of cream with no more than 10% fat content, 150 g of cheese, 1 onion, salt and seasonings to your taste.

The first step is to make the sauce. The cream should be poured into a small bowl. Add salt and seasonings to them. Seasonings can be anything. If you add a little lemon juice to the cream, the sauce will thicken and will resemble liquid sour cream in consistency.

Cut the salmon fillet into small pieces and place on a baking sheet pre-greased with vegetable oil. Pour the sauce over the fillet and let stand for about 20 minutes. After this, sprinkle the salmon pieces with grated cheese. Now you need to put the baking sheet in the oven, preheated to 180 degrees. Bake the fish for 30-35 minutes.

For the garnish you will need: 10 large or 15 medium potatoes, 2 egg whites, seasonings and olive oil.

First you need to make a light batter in which the potatoes will be cooked. To do this, beat the egg whites well. The potatoes must be cut into slices and mixed in the beaten egg whites. Then add all the seasonings to your taste. Add a small amount of olive oil to a baking sheet and place the potato wedges. If desired, you can sprinkle herbs on top. Potatoes should be baked at 220 degrees for about 40 minutes. In this case, the potatoes should be stirred every 10-15 minutes.

Pork rolls with prunes and feta cheese


Ingredients: 1 kg of pork neck, 200 g of feta cheese, 200 g of prunes, 250 g of sour cream with no more than 25% fat, 1 tablespoon of olive oil, 4 tablespoons of mustard with grains, 2 teaspoons of dried basil, salt and pepper to taste.

The first step is to prepare the prunes. To do this, you need to soak it in warm water to swell. Rinse the pork well and cut into longitudinal strips 2 centimeters thick (the meat should be cut across the grain) and beat well.

Mix sour cream with butter, mustard, basil and seasonings. This sauce should be coated on both sides of each piece of meat. Let the meat sit for 10-15 minutes. Now you need to dry the prunes well and cut them into small pieces, also cut the cheese.

Now you need to place the cheese and prunes on ¼ of the pork and carefully roll it into a roll. The rolls are placed on a baking sheet and baked at 180 degrees for about an hour.

Crackers are needed to make it convenient to eat the salad.

Required products: 200 grams of chicken fillet, 3 medium-sized potatoes, ½ can of corn, 150 grams of Korean carrots, 1 bunch of parsley, 3 tablespoons of mayonnaise, 1 bunch of lettuce leaves, salt to taste.

Place the curd cheese in a deep bowl and add parmesan, grated on a fine grater, finely chopped olives and pepper.

Ingredients: 300 grams of cod (you can use fresh or canned), 7 potatoes, 3 eggs, 2 cucumbers, 1 bunch of green onions, 400 grams of cheese, 1 red and 1 yellow pepper, 1 pack of mayonnaise and seasonings to taste.

Boil the cod, separate from the bones and chop finely. If you took cod in a jar or other fish, just mash it. You need to mash the potatoes. Finely chop the eggs or grate them on a fine grater. We will need:

  • herring – 1 piece
  • potatoes – 3 – 4 pcs.
  • beets – 2 pcs (small)
  • red onion – 1 pc.
  • parsley
  • mayonnaise – 1 tbsp. spoon
  • sesame seeds – 1 teaspoon
  • olive oil

Preparation:

1. Peel the herring from the skin and bones. It is best to take it lightly salted, so the appetizer will turn out more tender. Cut into small cubes. The smaller you cut, the more neatly you can make the “berries”.


2. Cut the red onion into very small cubes. It is not as bitter as white and is therefore preferred. We don't have many ingredients, and this will play a big role.


3. Mix herring with onion and add mayonnaise.


Mix. Add a little mayonnaise. So that the filling just holds together.


I would like to immediately note that the filling will remain. But it’s so tasty that it won’t last long. If you don’t want it to remain, then use only half a herring carcass and half an onion.

4. Boil the beets, cool and grate on a fine grater.


5. Also grate the potatoes on a fine grater. There should be exactly twice as much as beets, otherwise the berries will not be formed.


6. Mix potatoes with beets.


Let stand for a while until the mixture turns a uniform burgundy color.


7. In order to better sculpt the blanks, you will need to prepare the oil. I take olive. Since we have very little mayonnaise in the salad, the oil will be used as a dressing.


Lubricate your hands with oil. Place a tablespoon of the vegetable mixture on your palm and smooth it into a flat cake.


Place a teaspoon of herring mixture in the center.


Form a berry that resembles a strawberry in shape. In this case, all the filling should remain inside.


8. Attach a sprig with parsley leaves and place on a plate.


Do the same with the rest of the “berries”.

9. Once they are all on the plate, sprinkle them with white sesame seeds.

Preparation:

1. We will need one large raw carrot. It should be peeled and grated.

2. Pass the garlic through a press and add to the carrots. Add finely chopped parsley there. Add salt to taste.

3. Add mayonnaise to the mixture and mix.

4. We will need processed cheese specially cut into thin slices. It is sold ready-made in packaging and has the shape of a square.

We will need:

  • crab sticks – 200 gr
  • hard cheese – 100 g
  • egg – 3 pcs
  • garlic – 1 clove
  • mayonnaise to taste

Preparation:

1. To prepare this recipe, it is better to use hard cheese. For example, Parmesan is great. It does not stick together much and the Raffaello ball will turn out voluminous.

Rub it on a fine grater.


2. Boil the eggs, cool and also grate on a fine grater.

3. Spread the middle of the toast with a small amount of mayonnaise. Place the beet slice as the first layer.

4. Grease it with mayonnaise and lay out two circles of eggs.

5. Then it’s the herring’s turn. If you use fillet, you can roll it into a roll and place it on top of the eggs. If you already have herring cut into pieces, then lay out several at once.

Place the chopped onion ring on top.

6. Next will be a circle of potatoes. Grease it with mayonnaise and cover with parsley and dill leaves. Top our “cake” with a round beet circle cap. Press lightly so that the structure does not fall apart.

It's probably hard to find a person who doesn't like shrimp. Therefore, let's try to create a good mood with their help.

We will need (for 8 servings):

  • eggs – 4 pcs.
  • boiled shrimp – 100 g
  • mayonnaise – 2 – 3 tbsp. spoons
  • salt to taste
  • greens - for decoration

If you want the filling in the egg to be some other color, you can paint it with beetroot or carrot color. In the first case, it will turn out pink, and in the second, brownish-orange.

Preparation:

1. Cut boiled eggs lengthwise into two equal halves. Remove the yolk from them. Try to use eggs with a light yolk to make the snack look more positive.


Also, do not overcook the eggs, as this will cause the yolk to turn grey.

2. Crush the yolks into a homogeneous mass using a fork. Add two tablespoons of mayonnaise to the mixture and mix. If the mixture is not very soft, you can add another spoonful of mayonnaise. Add salt to taste.

You can optionally add chopped dill to the resulting mass. It goes well with egg yolk and looks beautiful when served.

To obtain a puree, the yolks and mayonnaise can be beaten with a mixer.

3. Fill a pastry syringe with the mixture and squeeze the mixture into each egg half. If you don’t have a syringe, you can simply put it out with a spoon.

4. Place the stuffed egg halves on a plate.

5. Place a whole boiled shrimp on each of them and garnish with a sprig of herbs.

  • olives – 0.5 cans
  • canned champignons – 0.5 – 1 can

We are preparing an original festive appetizer for the New Year’s table “Beet Christmas Trees”. This dish will please many guests. The light snack “Beet Christmas Trees” must definitely find its place among the numerous salads, jellied meat, sandwiches, hot and strong drinks.

Our recipe will have two types of creamy fillings, delicate cheese with an unusual lemon tint and the healthiest avocado - in a word, a win-win option. And, mind you, no mayonnaise!

Ingredients (for 6 servings):

  • small beets - 6 pcs.
  • soft cheese -150 gr
  • lemon zest -1 tsp
  • garlic - 2 cloves
  • avocado - 1 piece
  • thick sour cream - 1 tsp
  • lemon juice - 1 tsp
  • salt, pepper - to taste
  • greens - for decoration
  • wooden skewers (toothpicks) - 6 pcs.

Preparation:
1. Boil the beets in their skins or bake in the microwave. Cool, peel and cut into 5mm thick slices. Salt and pepper to taste.



2. Place the cheese in a salad bowl, mix with lemon zest, finely chopped garlic and Provençal herbs. Add ground black pepper for taste. You should get a homogeneous air mass.



3. Our second filling will be avocado. Spoon the avocado pulp into the salad bowl in the same way, add sour cream, a few drops of lemon juice, ground pepper and mash thoroughly with a fork.

The beginning of any festive feast is, without a doubt, the serving of snacks. The New Year's feast is no exception. Snacks for the New Year are an obligatory and important part of the menu, no matter what format of serving treats you choose, be it the traditional Russian feast that is familiar to us or the now fashionable buffet. With their design, their aroma and taste, the snacks are designed to whet our appetite and set us up for a festive New Year's mood.

When creating your New Year's menu, keep in mind that there should be much more snacks on the holiday table than on the everyday table. When choosing a snack for the New Year, try to take into account the tastes of your guests and compatibility with other dishes on your New Year's table. Traditionally, the most popular snacks are sliced ​​sausages, smoked meats and ham, fish delicacies and seafood, cheeses, pates, various types of aspic, pickles and marinades; we should not forget about such convenient and tasty snacks as small sandwiches and canapés.

An important role when serving snacks for the New Year is played by the decoration of the snacks themselves and the dishes on which the snacks will be served. For decoration, you can use fresh herbs, figures of fresh and boiled vegetables, olives, berries and anything that your imagination tells you. Even when serving simple and seemingly trivial cold cuts, you can play up this dish in such a way that it will be a stunning success with your guests. Just choose a beautiful wide shallow dish, lay it out with fresh lettuce leaves and sprigs of herbs, beautifully place several well-combined types of cold cuts on top, and place two or three vases with various sauces in the center of the dish.

But, of course, the New Year's table cannot get by with a simple set of sausages, smoked meats and cheeses. It is for the New Year's table that you definitely want to serve something special, something capable of causing surprise and admiration. I would like to please my guests with unusual and tasty snacks, which in themselves are small culinary masterpieces. Today “Culinary Eden” has prepared for you a selection of recipes for delicious appetizers that will certainly decorate your New Year’s table and delight your guests.

1. Deviled eggs are always popular. Change the recipe a little, and your unusual snack will be remembered with pleasure throughout the next year. Hard boil 12 eggs, cool and peel. Cut each egg into two halves and remove the yolks. Fry four slices of bacon until golden brown and puree in a blender. Add the yolks to the chopped bacon, ½ cup of mayonnaise, 2 tbsp. spoons of grated cheddar cheese and 1 tbsp. a spoonful of mustard. Beat everything together in a blender until smooth. Fill the egg halves with the prepared mixture and cool. Serve on a long narrow platter garnished with lettuce leaves.

2. Another extremely popular holiday appetizer is stuffed tomatoes. With a little patience and care, you can surprise your guests with unusual and extremely tender stuffed cherry tomatoes. Wash thoroughly 500 gr. cherry tomatoes. Carefully cut off the top and remove the pulp using a coffee spoon or the handle of a teaspoon. Turn the tomatoes cut side down onto a paper towel to drain any excess juice. For the filling, combine 3 tbsp. spoons of whipping cream, 150 gr. mozzarella cheese, 1 tbsp. a spoonful of finely chopped basil leaves and 1 clove of garlic. Place all ingredients in a blender and process until smooth. Fill a piping bag or plastic bag with a corner cut off with the prepared mixture. Lightly spray the inside of each tomato with white wine vinegar and fill with the cheese mixture from a piping bag. Place your tomatoes on a wide plate and garnish with basil and mint leaves.

3. It’s very easy to make small snack sandwiches with salted salmon or trout. From a loaf of rye bread cut three slices no more than 1 cm thick. Cut each slice of bread into 4 pieces and lightly fry on both sides in a small amount of vegetable oil. To prepare the sauce, place in a blender ½ cup mayonnaise, 1 clove garlic, 1 teaspoon fresh or dried tarragon (tarragon), ½ teaspoon dry mustard, 1 teaspoon capers, 1 hard-boiled egg and 1 teaspoon parsley. . Whisk everything together until smooth. Place 1 teaspoon of sauce on each crouton, place a rolled piece of salted salmon on top and sprinkle everything with a small amount of finely chopped green onions.

4. Canapés with salted trout rolls are very tasty. Cut a small cucumber into thin slices. Using a glass, cut out circles from the slices of bread for toast, approximately the same diameter as the cucumber circles. 100 gr. mix cream cheese with 1 tbsp. spoon of finely chopped dill. 200 gr. Cut lightly salted trout into thin slices. Spread each slice of trout with dill cheese and roll. Place a slice of cucumber on a circle of bread, place a trout roll on top and secure everything with a wooden skewer or toothpick.

5. Another option for extremely tasty and easy-to-prepare holiday canapés. Canapes with shrimps. 150 gr. Boil medium-sized shrimp in salted water with dill, cool and peel. Cut two slices of bread for toast into small pieces and lightly toast in a frying pan without oil so that a thin crispy crust forms, but the bread remains soft in the middle. Lightly rub each toast with garlic and spread with cream cheese. Place a thin slice of fresh cucumber on top, boiled shrimp on top of the cucumber, and place half an olive in the center of the shrimp. Secure your canapé together with a skewer.

6. Pancake rolls are an unusual and delicate appetizer that will definitely surprise and delight your guests. Mix 1 liter of milk, 1 egg, 1 tbsp. spoon of flour, 3 tbsp. spoons of vegetable oil, salt and sugar to taste. Bake thin pancakes from the resulting dough and cool them. Spread each pancake with a thin layer of melted cream cheese, top with thin slices of salted salmon (or other fish), long strips of pickled cucumbers and avocado, and sprinkle with finely chopped dill. Carefully roll the pancake, wrap tightly with cling film and refrigerate for half an hour. Free the finished roll from the film and cut into 6 rolls.

7. A refreshing, delicate snack of cucumbers and fruits will definitely appeal to all lovers of unusual flavor combinations. Chop 1 red apple and 200 gr into small cubes. canned pineapples. Lightly fry a quarter cup of shelled walnuts in a dry frying pan and chop. In a small saucepan, combine fruits, nuts, add ¼ cup of low-fat sour cream, salt to taste. Mix everything thoroughly and cool for 30 minutes. Cut three small cucumbers into 1 cm thick slices. Place 1 teaspoon of fruit and nut mixture on each slice and garnish with a small mint leaf on top.

8. Delicious little omelette rolls will decorate any table. To prepare an omelet, combine 6 eggs, 2 cups milk, 1 cup cream, ½ cup flour, salt and white pepper to taste. Line a baking tray with baking paper, pour in the egg mixture and bake in the oven at 200 degrees. until ready. For the filling, mix 1 cup of sour cream, 150 gr. finely chopped herring fillet, 1 finely chopped red onion and 1 tbsp. a spoonful of chopped dill. Fry the finished omelette with the filling, carefully roll it up and cut it into circles.

9. Snack biscuits with seafood can surprise and delight your guests. To prepare it, you can use it like natural crab meat and its substitutes, you can also take any other seafood to your taste. In a deep saucepan, combine 1 1/3 cups thinly sliced ​​crab meat, 1 ¼ cups white bread crumbs, 1 egg, 1/3 cup light mayonnaise, 1/3 cup finely chopped green onion, 1 tbsp. a spoonful of finely chopped parsley. Add ½ teaspoon salt, 1 ½ tbsp. spoons of lemon juice and ¼ teaspoon each of black pepper, ground thyme and paprika. Line a baking tray with baking paper. Form small cookies from the resulting dough and place them on a baking sheet. Bake in the oven until golden brown. Serve on a wide platter, garnish with lemon and lime slices and place a bowl of hot sauce in the center of the platter.

10. Unusual warm bacon rolls with prunes will definitely please your guests. Soak prunes (20 pieces) in sherry for 3 hours. Drain off the remaining sherry, place one hazelnut in each prune, and wrap a thin strip of bacon around the top of the prunes. Secure the rolls with wooden skewers, place in a baking dish and bake in the oven for 15 minutes at 180 degrees. Serve warm!
