Meatloaf is a dish for any celebration, because without meat, a holiday is not a joy.

The roll with mushrooms and cheese is especially tasty. Moreover, these products are available and not expensive.

Preparing meatloaf is simple.

You may not be a great cook, because our step-by-step photos will help you make a delicious dish that your loved ones and guests will appreciate.

This dish can be used as a holiday decoration or as an everyday dinner or lunch.

Meatloaf Products

For a roll for 2 servings we need:

  • 350 gr. pork or chicken fillet;
  • 100 gr. cheese;
  • 100 gr. mushrooms;
  • greenery;
  • onion;
  • spices.

As you can see, you don’t need a lot of ingredients, and with them the meatloaf will be finger-licking good.

You can choose any mushrooms; I took champignons because I was preparing the roll in winter. There is not much choice on the shelves at this time.

It is better to take pork without veins. This may be the tenderloin or the neck part. They are most convenient for preparing meatloaf from mushrooms and cheese.

Of course, if you don’t really like mushrooms, you can replace them with another product. For example, it turns out quite tasty

Use spices and herbs to taste. You can add parsley, dill, marjoram, caraway seeds, cloves and, of course, salt and pepper.

How to cook meatloaf with mushrooms and cheese

First you need to fry the mushrooms. To do this, first boil them for about 15 minutes (for champignons) in salted water.

Then cut a piece after another two centimeters. The result will be a kind of pig book.

When you are preparing for the arrival of guests or want to surprise your loved ones with something tasty and original, you begin to mentally list a wide variety of dishes that look and taste delicious. I want to cook something very spicy, but not overly complicated. One of these unusual recipes is mushroom rolls.

To prepare the rolls you will need:
meat (pork) - 300 g;

mushrooms - 150 g;
apple – 1 pc.;
onion – 1 pc.;
raisins – 50 g;
salt, spices.

First, let's prepare the filling for our rolls.

We wash the mushrooms in running water, then chop them finely.

Then we cut the onion.

Core the apple and cut into pieces.

Mix mushrooms, onions, apples and raisins. Salt and fry in vegetable oil until half cooked (5-7 minutes) over medium heat.

Preparing the meat for the rolls.

Cut the meat into portions.

We beat the resulting pieces as thin as possible.

Each piece of meat for the future roll should be salted and spices added to taste.

Place the filling on each piece of meat.

Carefully wrap our filling and secure with wooden skewers or toothpicks.

Place our rolls (seam side down) in a well-heated frying pan and fry over high heat until golden brown.

Turn the rolls over and fry on the other side.

After our dish has acquired a golden hue, reduce the heat and add a little water. Cover with a lid and simmer our rolls until cooked (10-15 minutes).

Our family loves it very much. I cook this dish quite often and constantly change something in the recipe. For example, I take different types of mushrooms, use one or another sauce, in which they are subsequently stewed in the oven.

A dish such as meat rolls with mushrooms has a large number of not only recipes, but also names. So, for example, they are also called krucheniki, fingers or “curls”. These names very accurately and vividly describe the appearance and technology of preparing the dish.

Today I want to show you how to cook delicious meat and mushrooms in the oven, as well as with soy sauce-based gravy. You can add a small amount of grated hard cheese to the mushroom filling, then you will get delicious meat rolls with mushrooms and cheese.

Ingredients for rolls:

  • Pork – 1 kg.,
  • Mushrooms – 300 gr.,
  • Onions – 1 pc.,
  • Salt - to taste
  • Bay leaf – 1-2 pcs.,
  • Spices - to taste
  • Sunflower oil

For the sauce:

  • Soy sauce – 50 ml.,
  • Sugar – 1 teaspoon,
  • Lemon juice – 1 tbsp. spoon,
  • Paprika – 1/3 teaspoon,
  • Dry Provençal herbs – 1/3 teaspoon

Meat rolls with mushrooms - recipe

Cut the pork tenderloin into thin slices up to 1 cm thick, 8-9 cm long and 5-6 cm wide. Place the pieces of meat on a kitchen board. Cover with film and beat them off as in. After this, they should become thinner, wider and longer.

Now you need to fry the mushrooms. To prepare meat rolls, you can use both boiled wild mushrooms and raw oyster mushrooms with champignons. In this recipe I will use boiled wild mushrooms that I have frozen since the fall. By the way, in terms of taste after freezing, they are in no way inferior to freshly boiled mushrooms. Dishes made from them turn out just as tasty and aromatic, although I think they contain somewhat less vitamins and other useful substances after freezing.

So, we cook or defrost wild mushrooms before frying. If champignons or oyster mushrooms are used to prepare meat rolls with mushrooms, be sure to rinse them with cold water and then cut them into thin slices.

Peel the onion and cut it into small cubes.

In a frying pan with a small amount of vegetable oil, fry the onions until golden brown.

Place the mushrooms.

Add salt, seasonings, bay leaf.

The frying time for champignons or oyster mushrooms will be about 5 minutes, while wild mushrooms need to be fried a little longer - about 10 minutes.

Remove the pan with mushrooms from the stove. Transfer them to a plate and let cool. Unlike any other mushrooms, when frying they release a lot of juice; when preparing the rolls, it is desirable that the mushrooms be as dry as possible, so to get rid of excess liquid, it is convenient to transfer the champignons to a plate with a slotted spoon or a special spatula with holes.

Now that the meat and mushrooms are ready, you can start preparing the rolls. To do this, place a chopped piece of pork on a plate or board.

Place mushrooms on the edge of one. Starting from this edge with the mushroom filling, wrap the strip of meat into a roll.

To prevent the meat rolls with mushrooms from unfolding during frying, secure the edges of the rolls with a toothpick. In this manner, prepare all other meatloaves with mushrooms.

Place the finished pork rolls with filling in a heated frying pan with oil, toothpick side down.

Fry them for about 2 minutes on each side, turning with a spatula. During this time, the rolls will brown, but will still remain raw inside. Transfer them from the pan to a plate. Carefully remove the toothpicks.

Prepare the gravy. To do this, pour soy sauce into a bowl.

Add sugar.

Add lemon juice.

If you don't have lemon on hand, substitute lemon concentrate or apple cider vinegar. In this case, the gravy for baking meat rolls with mushrooms will acquire the desired sourness. Add dry Provençal herbs and paprika powder.

Stir the sauce.

Place the rolls in a baking dish, seam side down.

Pour the sauce over them. Place in an oven heated to 190C. Bake meat rolls with mushrooms in the oven for 20 minutes. They can be served either cold or hot. In addition to them, you can offer bechamel sauce, cranberry sauce, mustard, Tabasco, sour cream sauce with garlic. Before finishing the article, I want to say that meat rolls are prepared with different fillings, and not just mushrooms.

Nuts, onions, carrots, bacon, ham, mushrooms, cheese, pickled cucumbers, olives, sauerkraut, lard, dried fruits - dried apricots, prunes are used as fillers. Instead of mushrooms, you can try taking one or two of the above ingredients and making rolls using this recipe. Enjoy your meal. Step 1: Prepare ingredients for baking.

First, wash and dry the meat. Then we make a deep cut along the piece of meat to half the thickness. After which we make cuts left and right, and also check so as not to tear the meat. The wall thickness should remain 7-8 mm. Then, as we open the book, we will also do the same with the meat. Now we wrap the meat in cling film or a bag and then beat it well. We wrap the meat so that when beating, we do not cut through it. Don’t think that after this you won’t be able to pull the film off the meat, unless you hit it with great force and get a meat porridge, then you probably won’t remove it. Then remove the package (film) from the carefully beaten meat and coat the meat with salt, pepper and chopped garlic.
Mushrooms are good for filling. Fry them with chopped onions and leave to cool. When the filling has cooled, grate cheese and finely chopped herbs into it.

Step 2: Fill the meat with the filling.


Now the meat waited for his turn. We spread the filling, which consists of mushrooms, and then roll it into a roll. To make the roll beautiful, watch how you lay out the mushrooms. It is necessary that the meat strictly covers them on all sides.
As we know, to prevent the roll from falling apart, we tie it with thread and put it in a baking bag.

Step 3: Serve to the table.


The roll is baked for about an hour and a half. Preheat the oven to 180 degrees. Then remove the bag and let the meat brown for another 20-30 minutes. Bon appetit!

Use mushrooms to your taste, I took honey mushrooms because I love them very much, but I offer you champignons.

You can take any meat: chicken, beef, pork, whatever you prefer.

You can also add a little grated boiled egg to the filling.

Ingredients:

Champignons 100g – 20 rubles

Vegetable oil 50ml – 5 rubles

Dried apricots 40g – 17 rubles

Beef (shank fillet) 400g - 175 rubles

Grain mustard 20g - 6 rubles

Thyme 3 sprigs - 3 rubles

Salt, pepper to taste


Sauce:

Dry red wine 50ml – 20 rubles

Liquid honey 20g - 7 rubles

Grapefruit 1 piece - 20 rubles


Garnish:

Arugula 40g – 45 rubles

Strawberry 40g – 50 rubles

Pomegranate seeds 30g - 5 rubles

Olive oil 20ml – 20 rubles



Preparation:

  • Rinse the champignons under running water, chop finely and lightly fry in vegetable oil. Pepper and salt. Stir, remove from heat.
  • Cut dried apricots into cubes. Add to mushrooms, mix again.
  • A piece of beef needs to be unfolded, as it were: cut in the middle, but not all the way. Cut the edges of the meat on both sides in the same way. You should get a not very thick layer of meat.
  • Cover the meat with film and beat with a hammer. The edges need to be beaten off especially well: they should be thin.
  • Season the beef with salt and pepper, and then coat with a thin layer of grain mustard. Place the mushroom filling in the center of the beef.


  • Wrap the meat in a roll, and to prevent it from falling apart, tie it with food thread, but do not tighten it too much.
  • Fry the roll on both sides in a frying pan in 30 ml of oil until golden brown, placing thyme sprigs in the frying pan. The meat should remain raw inside.
  • Bake the meat in the oven for 20 - 25 minutes at a temperature of 180 - 200 degrees. When placing the roll in the oven, place thyme sprigs on the meat so that the meat is even better saturated with the aroma of herbs.
  • When the roll is ready, you should not cut it right away: you need to wait until it cools down, otherwise all the juice will flow out. Cut the rope.


Sauce:

  • Pour wine into the pan, put on maximum heat and bring to a boil.
  • When the wine has evaporated, add honey.
  • Stirring constantly, keep on fire for another 3 minutes. Peel the grapefruit and divide into segments. To obtain grapefruit slices, separate them with a knife, cutting along the white membranes.
  • When the sauce begins to bubble and thicken, add the grapefruit slices. After 1 minute, remove from heat.


Garnish:

  • Cut the strawberries into slices. Cut the pomegranate peel with a knife, but do not cut through to the grains. Divide the pomegranate into two halves.
  • Knock the pomegranate seeds out of one half by tapping the sides of the pomegranate with a tablespoon.
  • Place arugula, strawberries and pomegranate seeds in one bowl and drizzle with olive oil. Mix.



Serving:

  • Cut the roll and place it in a semicircle on the edge of the plate. Place salad next to it.
  • Pour wine sauce over meat and salad, arrange grapefruit slices.
