With the advent of private bakeries and prepared food departments in large supermarkets, our bread consumption culture, so to speak, has changed. If earlier it was simply an addition to dishes that added satiety to the meal (because the choice was simple - black bread, loaf, bun), today we are learning to appreciate bread in itself and select it for different dishes.

However, this pleasure does not come cheap, since any “special” bread of non-mass consumption has a special price, despite the fact that its cost is almost no different from the cost of ordinary bread, because the technology changes more than the composition.

Therefore, gourmets who want to eat tasty food for the same money should learn how to bake their favorite types of bread at home: they will have fresh bread for dinner, savings and pleasure from the process are a complete positive.

An example of such a tasty and simple bread is cheese sticks. The usual yeast dough on water, a little hard cheese - and you have fresh, crispy, salty bread that will decorate your usual dishes.

Ingredients

  • water - 170 ml
  • flour – 2 tbsp. (250 ml each)
  • dry yeast - 1 tsp.
  • hard salted cheese – 50-100 g
  • honey – 1 tsp.
  • salt – 0.7 tsp
  • sunflower oil - 1 tsp.
  • milk – 1 tbsp. l.

Preparation

1. Mix all ingredients except milk (milk is needed to lubricate the sticks) and knead into a thick, non-sticky dough. Knead it for 5-10 minutes.

2. Leave the dough to rise 3-4 times in a warm place. This will take 2-4 hours, depending on the room temperature.

3. Knead the dough, gather it into a ball and roll it out on a floured surface.

4. Sprinkle the dough layer with some finely grated cheese.

5. Gather the ends of the dough together.

6. Roll it out again and sprinkle with the second part of the cheese.

7. Gather the ends of the dough, knead it a little so that the cheese is distributed throughout the thickness, and roll out again.

Cut the dough layer into strips.

8. Make a spiral out of each strip by twisting it at the ends.

9. Place the sticks on a baking sheet, let them rise a little, brush with sweetened milk and sprinkle with the remaining grated cheese.

10. Bake the sticks at 150°C until golden brown.

Note to the hostess

1. Among semi-hard cheeses there are salty varieties - such as those required by the recipe. Along with durum varieties, they can be used in cooking. There is just a problem: when rubbed, they turn out to be sticky lumps, but you need crumbly shavings. A short freeze will correct the problem. Small blocks of cheese, after lying in the freezer for a quarter of an hour, will easily succumb to the sharp teeth of a grater. The crushed product will be of the desired configuration.

2. Don’t give up baking these breads if you don’t have honey at home. Let sugar (40 grams) or some thick and viscous syrup, for example rosehip syrup (a teaspoon), go into the knead instead. True, it will darken the dough a little, but this is even original. The crust will turn light brown and the crumb will turn beige. Molasses will provide a similar effect.

3. For buffets, they always try to choose bakery products that do not crumble. Cheese sticks are ideal in this regard. Therefore, they make buffet sandwiches based on them, baking even and large products that look like elongated buns. They are easier to eat than open sandwiches. Guests are always more willing to take food from the table that guarantees clean hands and careful consumption.

Cheese sticks are an excellent substitute for a piece of bread, so they can be served with first courses, especially clear light soups. They are also suitable for vegetable salads. Cheese sticks are equally delicious cold or hot.

Ingredients

  • ready-made puff pastry - 250 grams (1 layer)
  • hard cheese - 100 grams
  • cumin - 1 tbsp. spoon
  • yolk for greasing sticks - 1

    The most important thing is that the finished store-bought puff pastry is defrosted at the time of cooking. This needs to be taken care of in advance.

    Heat the oven to 190 degrees. The baking sheet can be greased with butter or covered with parchment.

    Grate the cheese coarsely.

    Place the yolk in a small bowl, add a drop of water and stir - a liquid yolk is easier to grease the dough with.

    On a surface (cutting board) lightly dusted with flour, roll out a layer of dough quite thinly (3-4 mm).

    Using a brush, thoroughly brush the entire surface of the dough with yolk.

    Sprinkle with cheese, spreading throughout the dough. Sprinkle with caraway seeds, distribute evenly so that subsequently the caraway is present in each stick approximately equally.

    With a quick movement, fold the layer in half (toward or away from you). Press with your hands.

    Using a sharp knife, cut strips a centimeter and a half wide.

    Taking the strip in your hands, twist it around its axis 3-4 times.

    Place on a baking sheet.

    When all the twisted sticks are placed on the baking sheet, grease them with yolk, trying to grease not only the dough, but also the cheese layer. Bake for 7-10 minutes.

    The sticks bake quite quickly, so keep an eye on them.

On a note

If you want the sticks to be salty, use the appropriate cheese.

In addition to cumin, you can use any spices you like in the recipe. for example, hot red pepper or pepper pieces (dry), rosemary, coriander.

Store the finished sticks in a covered container to prevent them from getting damp.

The first option is the simplest: cheese sticks made from ready-made puff pastry. This is a quick and easy option for beginner cooks or if you urgently need to cook something delicious.

The second option takes longer to prepare, but it turns out a lot and is very tasty! These are cheese sticks made from shortcrust pastry, similar to homemade chips, only even tastier. The recipe can be found at the link above.

Well, the third option is cheese sticks made from yeast dough, similar to those sold in the bread departments of supermarkets, where fresh baked goods smell wonderful! I don’t know how they make them there, but if you think about it, you can make cheese yeast sticks at home. I was inspired to do this experiment by a letter from reader Victoria - she, like me, really likes cheese sticks, so we decided to bake them at home: just as soft, with a crispy, golden-brown cheese crust!

Once again it is confirmed that almost all baked goodies that are sold in stores can be baked at home! At home you can easily make chocolate cake, custard pies, sochniki, biscuits, and now - cheese sticks!

Ingredients for yeast dough cheese sticks:

  • 50 g fresh yeast;
  • 1 glass of water or milk;
  • 1 tablespoon sugar;
  • 50-70 g butter;
  • 3 eggs;
  • 1 teaspoon salt;
  • 5.5-6 glasses of flour;
  • 150 g hard cheese.

How to bake yeast cheese sticks at home:

As a base for the dough, we take a proprietary recipe for rich yeast dough, only changing it a little, because our buns will not be sweet.

Grind the yeast with sugar, pour in warm milk, mix, sift 1 cup of flour, mix more and put in a warm place, covered with a towel.

After 15 minutes, when the dough rises and bubbles appear in it, add warm melted butter, salt and 2 eggs (and leave the third for greasing).

Little by little, in 3-4 steps, sift through the rest of the flour, kneading a soft dough that does not stick to your hands. After kneading the dough well, put it in a warm place again for 15-20 minutes.

Then knead the dough, divide it into 7-8 parts and roll out oblong flat cakes up to 0.5 cm thick.

Grind 100 g of cheese on a coarse grater and sprinkle on the flatbreads. We leave a small piece of cheese, we will need it later.

Roll the flatbreads into a roll.

And pinch the edges well.

Place the cheese sticks on a baking sheet greased with vegetable oil, at a distance of 4-5 cm from each other, so that they do not stick together during baking when they are suitable. Let rise in a warm place while the oven preheats (5-10 minutes).

Place in a warm oven and bake at 180-200C for about 20 minutes. While the sticks are baking, beat the egg with a fork for greasing and grate the small piece of cheese that we left on a fine grater.

Then we look: is the crust on the buns dry? So it's almost ready! We take out a baking sheet, grease the sticks with beaten egg (or better yet, bright homemade yolk!) and sprinkle with grated cheese.

Place in the oven again, increasing the heat for 5-7 minutes.

The bun sticks will brown beautifully, and the cheese will melt deliciously!

Cheese sticks in the oven prepared according to this recipe have a dry texture and a fairly salty taste, which allows you to use the baked goods as an addition to a glass of foamy beer. The good news is that the recipe is very simple - all the steps are completed simply and very quickly, so the appetizer will not take long to arrive!

In addition to alcohol, cheese sticks are also combined with first courses, successfully replacing bread, all kinds of buns and flatbreads. This pastry is also good accompanied by tea, coffee or other drinks.

Ingredients:

  • hard cheese - 100 g;
  • feta cheese - 100 g;
  • butter - 100 g;
  • egg - 1 pc. into the dough (+ 1 egg for greasing the cheese sticks);
  • baking powder - 1 teaspoon without a slide;
  • flour - 150-200 g;
  • sesame seeds - about 2 tbsp. spoons

How to cook cheese sticks in the oven

  1. Combine softened butter with one raw egg. Carefully mash the mixture with a fork.
  2. Three small shavings of hard cheese.
  3. Next, grate the cheese in the same way.
  4. Add two types of cheese to the butter mixture and mix thoroughly until smooth. The cheese will make the sticks quite salty, so in this case there is no need to add additional salt to the dough.
  5. Mix about half a glass of flour with baking powder and sift into the butter and cheese mixture, stir.
  6. Next, we begin kneading by hand, adding flour in small portions. We achieve a dough that is elastic and does not stick to the palms. If necessary, increase the dosage of flour.
  7. From the resulting flour mass we form thin “flagella” about 15 cm long and place them on a baking sheet covered with parchment.
  8. Brush each piece with a raw egg and then generously sprinkle with sesame seeds. Bake the cheese sticks in an oven preheated to 200 degrees for 15-20 minutes (until a light golden crust appears).
  9. After removing from the baking sheet, you can immediately take the freshly prepared pastries to the table. These sticks are good both hot and cold.
