Eggs and sugar are whipped into foam. Put 20 g of margarine into the flour and grind well. Mix eggs with sugar and margarine with flour.   • cocoa - 1/3 - 1/2 teaspoon;

  • milk - 150 ml;
  • water - 30 - 50 ml.

Cocoa powder is not hygroscopic, that is, it does not mix well with water, so it is not enough to mix all the ingredients and boil the drink.

The correct cooking process looks like this:

  1. Sugar and cocoa powder are mixed in a bowl. All grains of sugar should be covered with chocolate powder. There should be no cocoa powder left on the bottom.
  2. Boiling water is added, about 30 - 50 g. Water is needed not only to dilute the dry ingredients, but also to balance the taste of the drink. According to the standards, it should be moderately sweet, with a hint of milk and chocolate.
  3. Cocoa and sugar must be ground in boiling water into a homogeneous mixture. If the ingredients are thoroughly mixed dry, there will be no problems. If there is a layer of cocoa powder left in the bowl, you will have to deal with lumps.
  4. Milk is heated separately. At a temperature of 50ºС, inevitable and irreversible changes occur in it: albumin protein folds; calcium and phosphorus are converted into a hydrophobic form; milk fat is saturated with the obtained solid compounds. As a result, a film forms on the surface of the milk, which will become dense and spoil the appearance of the drink after it cools. In addition, most of the useful substances will pass into it, the composition of the product will become poorer.
  5. So that a film does not immediately form in the pan, the milk is whipped with a whisk, not allowing it to boil violently.
  6. The chocolate mass is introduced into the milk in a thin stream, without stopping stirring the contents of the pan.
  7. No need to boil cocoa. The drink is brought to a boil and removed from the heat.
  8. The cocktail is served and drunk hot, because when it cools down, the film forms anyway.

The drink turns out to be very high-calorie and saturated. Despite this, gourmets prefer to diversify the recipe with melted dark chocolate, cognac, vanilla sugar and other additives. You can cook hot chocolate with a few grains of salt, which will greatly exacerbate its taste.
