Juicy cottage cheese casserole with banana and bran (video)

If you want to try a delicious and tender dessert that will melt in your mouth, then prepare a cottage cheese casserole!

An uncomplicated, tasty and healthy breakfast made from your favorite product: oatmeal.

I found this American recipe on YouTube, it got there from this site. If you have no problems with English, you can refer to the original recipe by searching for baked banana oatmeal.

Important: do you know what happens when you make a carrot pie, for example, but you won’t even realize that it tastes like carrots? This is not this option. We are preparing oatmeal and it will taste like oatmeal. This is not a dessert, but a breakfast, it is terribly tasty, but the love for oatmeal is the key point here. If you don't eat it at all, then chances are this casserole is not for you.

We will need:
2 cups oatmeal large, coarse flakes, not the delicate porridge of the Nordic type; in the American recipe it is called rolled oats, in our country, as it seems to me, this is a banal rolled oats (the recipe stipulates that the flakes can be different, but then a different amount of liquid is needed)
3 bananas, better than ripe
1 egg or two squirrels
1.5 cups milk
1 tsp cinnamon
vanilla
, or vanilla sugar, or vanilla extract
salt
1 tsp baking powder
Brown sugar
optional

What I don’t like about American recipes is their stupid cup measurements. One American cup contains approximately 240 milliliters. I took a measuring cup, measured out 240 ml of water and selected a small cup from the existing ones, which later became my measure. She is in the photo.

First, mix the dry ingredients: cereal, cinnamon, baking powder and vanilla sugar (for me, if you have an extract, then it belongs in the liquid ingredients). Add salt here. The original recipe calls for as much as a teaspoon of salt, which seems to me to be too much. I tried cooking with 1/3 tsp. salt and no salt at all. For my taste, it can be done without salt.

Next, take a banana and mash it with a fork into porridge. It’s easier to work with an overripe banana; besides, we don’t add sugar to the oatmeal; the banana will add all the sweetness to the dish. Ripe bananas are sweeter, so I recommend them.

Add a slightly beaten egg to the mashed banana (the recipe from YouTube calls for 2 whites, supposedly this way the casserole rises better; I tried cooking this way and that way, I didn’t notice much of a difference, so if you have whites left from something, let them be whites , and if not, don’t bother and put an egg). This also includes milk and vanilla extract if you are using it.

Mix everything well and pour into the dry mixture.

Cut one of the remaining bananas and place it in the pan. I have a rectangular glass mold, approximately 17x27 cm. You can take any other one, but if you use metal ones, do not forget to cover them with paper or grease them with oil, otherwise you will not get the finished product out. It will be excruciatingly painful. And yes, I have just a huge banana here)))

Pour the oatmeal mixture on top, level it and lay out another chopped banana.

If desired, you can sprinkle the casserole with brown sugar, just for beauty, so that it caramelizes beautifully on the bananas. In one recipe this is done immediately, in another 3-5 minutes before readiness. It seems to me that the second method turns out more beautiful. But this is all lyrics, if you watch the amount of sugar you consume, you don’t need it at all.

The whole thing is baked at 190 degrees Celsius (375 Fahrenheit) for about 25-30 minutes. I don’t preheat the oven much in advance; it heats up very quickly for me. Reheated the next day, it's not as great, but still quite tasty. From the specified amount of ingredients you will get 4 large hearty servings.

I will repeat the picture with the result.

How to cook with photos step by step

For cottage cheese casserole, choose ripe, even overripe, soft and sweet bananas. These bananas have brownish spots on the peel. They usually cost less, and taste much nicer than beautiful yellow bananas. Cut the banana into slices and mash with a fork into a paste.

Mix banana puree and oatmeal. Leave for 10-15 minutes to allow the cereal to absorb the fruit juice and soften. If you use instant oatmeal, you can immediately mix it with cottage cheese and prepare the casserole.

Mash the grainy, dry cottage cheese with a masher. Break up the soft paste with a fork. Add an egg or beat the egg white into a foam and mix with the cottage cheese.

Rub everything well. The curd mass should be viscous, not liquid, almost homogeneous, without large lumps.

It’s up to you to add semolina or not. It will increase the calorie content of the casserole, but will make it denser in consistency. Semolina must be thoroughly mixed with cottage cheese.

Place the oatmeal and banana puree into the curd mixture. Mix everything. You can add a little cinnamon or vanilla sugar, a couple of pinches of vanillin.

The curd-oat mass will be viscous and dense. Taste it - perhaps the banana was completely unsweetened or had a grassy taste, in which case it is better to add a little sugar so as not to spoil the casserole.

It is better to take a shallow and wide baking dish - the casserole will be ready faster in it. Grease the bottom and walls with butter, butter or vegetable oil. Pour in the curd mixture and smooth it out.

Do not fill to the edges, leave some space. Keep in mind that when heated, the curd mass will rise a little and then settle, and if you fill it to the brim, the curd may spill onto the grate.

Place the casserole in a hot oven, preheated to 180 degrees. On a medium level on the grill, the casserole will be ready in 25-30 minutes; if the pan is deep, it will take 35-40 minutes. Let the finished casserole cool and then cut into pieces. This is especially important if the casserole does not contain semolina - in this case it must be cooled, otherwise you simply will not be able to remove the delicate casserole from the mold.

It is better to serve cottage cheese casserole with banana and oatmeal completely cooled or warm - then it will hold its shape and its taste will be more expressive and rich. You can add any sauces - berry, yogurt with fruit, and if calorie content is not important to you, then serve with sour cream or condensed milk.
