Knead soft dough. If necessary, you can add a little more flour.

Line a wide baking tray with baking paper and lightly grease it with vegetable oil. Divide the dough into two equal parts. Roll out one part and place on a baking sheet. The dough is difficult to roll out with a rolling pin, since it is very tender, it is easier to stretch it with your hands.

Peel and cut the apples into pieces, arrange them in an even layer on the dough.

Cut the dried prunes into pieces and scatter them over the apples.

Roll out the remaining piece of dough and cover the fruit with it, pressing the edges of the pie with your fingers. Preheat the oven to 200 degrees and place the workpiece in it. In modern Russian cuisine there is a similar pie, where sour cream is used in the filling instead of butter. For some reason it is called Tsvetaevsky. Another signature apple pie is Tarte Tatin. Its name is also associated with two sisters - Stephanie and Caroline Tatin, who ran an inn in the French town of Lamotte-Beuvron and themselves prepared food for guests. The delicious apple tarte Tatin was created thanks to Stephanie's mistake. Either she forgot to put a layer of dough under the apples when she was preparing a regular apple pie; either she forgot about the apples languishing in caramel, they got burnt, and Stephanie saved the situation by covering them with a layer of dough; or maybe she completely dropped the apple pie and decided to serve it without a top. Pour 200 g of sugar into a thick-bottomed saucepan, add 2-3 tablespoons of water and place over high heat. When the mixture bubbles, pour in the oil, add the cinnamon and vanilla and stir the caramel until it turns golden. Do not leave the caramel unattended - it may burn. Turn off the heat, place the apples tightly in the caramel and place in the oven for 15-20 minutes at a temperature of about 160ºC.

To prepare the dough, mix sugar and butter, add mashed bananas to the porridge. Mix 1 cup of flour with baking powder and salt, add to the banana mixture and mix thoroughly, gradually adding flour to obtain a dense consistency. Form the dough into a ball and flatten it into a flat cake, slightly larger in size than the pan in which the apples are baked. Remove the pan with apples, cover with a layer of dough, tuck the edges in and place in the oven for another 15-20 minutes. After removing the pie from the oven, leave it for a few minutes, after which you can turn it over onto a plate and bring it to the table.

If you want an apple pie without excess sugar, sour cream, butter and other extra calories, prepare a simple tart:

1 cup flour,
70 g butter,
2-3 apples,
3-4 tbsp. apricot jam,
salt, sugar, cinnamon - to taste.

The next post, that is, this one, will be devoted to a wonderful and delicious topic: how to make apple pie and how to make excellent pie dough.

Apple pie is a classic of the genre. There is hardly a person who has never tried apple pie and there is hardly anyone who does not like it. The cuisine of different countries has its own recipes for this baking. Charlotte and Tatin, which came to us from France. Strudel - popular in Austria, Hungary, Germany and the Czech Republic and many more variations.

But whatever they are called, in my opinion, with which you, of course, have the right to disagree, in the end they are, by and large, an apple pie. The only difference is in the cooking method and finished appearance.

I dare to suggest that in Rus' a large number of pies were baked during the Apple Savior. This is a Christian holiday that is celebrated on August 19th and actually has pagan roots. The holiday is dedicated to the new apple harvest. On this day, all believers brought fruits and honey to the church for consecration. It was even believed that apples should not be eaten before the Apple Savior. Here's a micro-excursion into history for you. There are no problems with apples these days. In modern supermarkets you can buy them all year round, and the product is presented in at least five types. And thrifty gardeners store winter varieties almost until the spring of next year. So if you want to bake an apple pie, there will be no problems.

The main thing that distinguishes our apple pie from others is the recipe, which is very simple and even the most inexperienced cook can do. Now, with your permission, I will make the dough for the pie. As you know, it is the basis. No dough - no pie. The apple pie itself will not be purely apple; we will add apple jam and dried apricots (dried apricots) to the filling.

The pie that you see in all the photos and videos is made from ½ of all the ingredients needed for the dough. But I present the recipe itself in its original form, i.e. full.

Pie dough: ingredients

For the test we will need:

  • eggs – 2 pcs.;
  • sugar - 2.5 tablespoons;
  • salt – ½ teaspoon;
  • flour - 3 cups (maybe a little less or more, depending on how much the dough takes);
  • vegetable oil – 2 tablespoons;
  • melted butter – 100 grams;
  • warm milk – 1 glass (200 ml.);
  • dry yeast - 3 teaspoons (without slides).

Procedure for preparing the dough

Step 1. Pour some water into a glass and pour the yeast into it; while we mix the rest of the ingredients, the yeast will dissolve. I always dissolve them in water, even if the recipe doesn't call for it. Firstly, they dissolve faster in water than, for example, in milk. And secondly, kneading dough in which the yeast is evenly distributed throughout the entire volume is better than when it remains granules.

Step 2. Lightly heat the milk, melt the butter and combine everything in a bowl in which we will knead the dough.

Step 3. Break the eggs there and pour in vegetable oil.

Step 4. Then add sugar and salt.

Step 5. Mix everything thoroughly with a whisk until foam forms and pour in the dissolved yeast.

Step 6. Sift the flour and gradually add it to our dough. There is no need to pour it all at once, there may be a lot and the dough will turn out very tough.

Step 7 Knead soft dough. Grease a clean bowl with vegetable oil, place the dough in it and cover with cling film. In this state we put it in the refrigerator for an hour and a half. Not in the freezer!

Meanwhile, while the pie dough is in the refrigerator, prepare the filling. I said above that I make my pie with a filling of fresh apples, apple jam and dried apricots. Therefore, I cut the dried apricots, pre-soaked in hot water, into pieces. I also cut fresh apples and mix everything with apple jam. The proportions are completely arbitrary.

If you are making your pie with only apples, then cut them into slices and sprinkle with sugar. It is, of course, better to cut apples just before storing them. Otherwise they will turn black. There is another option: sprinkle the apples with lemon or orange juice, then they will not turn black and will calmly wait their turn.

Recipe: making a pie with dried apricots and apples

Meanwhile, an hour and a half has passed, the dough is ready, the filling is ready. Let's get started:

Step 1. Divide the dough into 2 parts. One is larger, the other is smaller. The larger one is the base, the smaller one will be the top part. We roll out the base so that there is enough to cover the sides of the pan in which we will bake. I have a round one. You can have a rectangular one or any other.

Step 2. We spread the filling on the base, cover with the second part of the dough, which was also previously rolled out. The diameter of the “lid,” let’s call it that way, is smaller than the base and approximately equal to the diameter of your mold.
Step 3. We connect the edges of the two layers of dough (top and bottom) and braid the same braid as on. But before that, trim off the excess dough around the edges, it will be useful for decorations. Be sure to make a small hole or cut in the center of the cake. This is done so that it does not break during baking.

Step 4. Cover the finished decorated apple pie with a napkin and leave in a warm place for 30 minutes to rise. Before baking, brush with egg, maybe just yolk, and place in the oven. Baking time is about 20 minutes at 180˚C. We check readiness with a toothpick by piercing the pie in the area of ​​​​the edges - where the dough is thicker.

Leave the finished apple pie in the mold to cool slightly and only then remove it from the mold. I hope this apple pie, the recipe for which I described, will be an excellent decoration for your table.
